Our fishermen catch the freshest fish. Our myriad of talented farmers grow leafy greens and vegetables that are utilized with my creativity in cuisine. Bright buckets of ripe heirloom tomatoes, and yellow wax and green beans, the fragrance of tarragon, dill, basil, a parade of peaches, plums, strawberries, and blueberries are perfect for the artistry of cooking. How to plan a Dinner Tuscan Style under the Stars .... Fully designed so you can enjoy all as a host
This meal celebrates the season and the abundance with a European setting. A long table is placed under the trees ( cloth, white china, flatware, glasses ) Short vases filled with lemons are placed going down the table. Garden chairs with provincial textiles pillows and warm blankets as throws on some of the chairs ( As the evening gets a little chillier ) Magical twinkled votive candles are everywhere...
Greet guests with a farm house table ( Arlene will find you one or use yours ) accented with tomatoes on the vine , large artichokes and ceramic vases filled with our farm growing tall sunflowers. Stationary ceramic platters are filled with Deliciousness: Bruschetta ( chopped ripe tomatoes , sprinkle of salt fresh basil Adorned with skinny architectural Italian light breadsticks
Seared Peppercorn sushi grade tuna presented on an English cucumber topped with wasabi and caviar ( no bread or cracker use vegetables instead as the base). I have put shrimp in Meyer lemon essence and dill or gravlox salmon with a dense mustard.
Dinner is a grilled white fish cooked in fresh herbs and dash of white wine and olive oil
Grilled Colorful red , yellow peppers, eggplant seared painterly plattered
London Broil sliced ( room temperature) with portobello mushrooms and onions with a drizzle of lemon aioli accompanied with small bite size baguette ( offering of less carbs is important )
A large Display of orzo, arugula, sunflower seeds, citrus sliced & mint leaf salad
Lingering around a warming pit guests eat fresh berries in shot glasses , tiny meringues and dark chocolate biscotti with coffee

Thanksgiving: Go “Traditional with a Twist “
Rotfeld offers personalized and outstanding hors’ d’oeuvres along with the meal’s main event.
Golden brown turkey with a soy honey rub, rich sage and diverse herbs with apricot and cornbread stuffing.
Yummy healthy quinoa with pomegranate seeds and caramelized onions.
Hearty sweet potato pies topped with cinnamon, powdered sugar and light-as-air whipped cream.
Green mosaic salads, composed of sautéed Brussels sprouts, candied cashews, yellow and red orange-infused beets and arugula. Montrachet cheese. Warmed pies of fruit topped with vanilla bean or toffee brittle ice cream. Decor of twisted tall branches in vases and leaves strewn on silk ribbons to hang around the window beams. The table dressed with multiple centerpieces made of autumnal fruits and vegetables, and vessel vases filled with colorful vibrant florals.

Christmas or Hanukkah
Creativity really comes full blast as Rotfeld stages your home with the magic of Christmas. Holiday cheer is everywhere—staircase, mantels, fireplaces filled with pillar candles, tables of red and green tartan runners, tree trimming topped with an artful French wired bow and the amazing aroma of oranges studded with cloves simmering in apple cider on the stovetop—a walk through the home reveals a world of glorious decor.
Luxurious buffets feature a fruits de mere of colossal shrimp, lobster presented on three-tier silver stands, caviar and toast points, grilled Chilean sea bass in lobster broth, creamy seafood risotto and a panoply of rich chocolate ganache desserts topped with edible silver candied balls. Then add the family’s polished flatware and China to keep that feeling of history and tradition alive.

Each year I am so delighted to cater in the Hamptons, our bucolic, peaceful, and simply gorgeous home. Why is it that The Hamptons never cease to engage us with such beauty and a sense of calm? We are at our best, feeling healthy, eating healthy, exercising, and entertaining our friends with great spirit and a hearty welcome back to the season.
Entertaining is where my creative skill sets come in to play. Indeed, my with experience assisting clients for over 25 years, I can create a sense of calm. My expertise is in delivering the the confidence to a client that all will be well, and their event will be implemented expertly and beautifully.
Where to start and how to do it? Those questions can be overwhelming to even experienced hosts and hostesses. My job is to listen, and guide, then create a menu. After a walk-through, and final details, the vision becomes a reality. On the “ Day Of”, all is orchestrated, and my clients trust me to “lead the band”. The talented crew unloads the luxe rentals, and I create the look of the tabletop presentation, with seasonal flowers pouring out of a vase, accented with fruits and vegetables. The emphasis is on the “wow” and the beauty. Perfect execution means impeccable staffing, careful timing, proper flow, and of course, the scrumptious cuisine that is perfectly in tune with the event and the venue. While I conduct the event orchestra, my client gets the chance to relax, and be a stress-free host host that enjoys their guests, has relaxed conversations. They can actually listen to the music of their friends talking and enjoying the party !
